Terroir & Climate
The secret to Chablis lies beneath the surface: Kimmeridgian limestone, a 150-million-year-old soil rich in fossilized oyster shells. This ancient seabed imparts the wine's signature flinty minerality and saline edge. The cool continental climate—marked by late springs and the ever-present threat of frost—yields grapes with vibrant acidity and restrained alcohol, creating wines of remarkable freshness and longevity.
Style & Winemaking
True Chablis is fermented and aged in stainless steel or neutral oak, allowing the terroir to shine without the influence of new wood. The result is a wine of crystalline purity: citrus-driven, mineral-laced, and bracingly dry.
