    Tasting Notes

Appearance: Deep ruby red with garnet reflections, showcasing the wine's concentration and maturity.

Nose: Intense and complex aromas of ripe blackberry, dark cherry, and plum, layered with notes of dried figs, dark chocolate, vanilla, and sweet baking spices from oak aging. Hints of Mediterranean herbs, tobacco, and a touch of licorice add depth and intrigue.

Palate: Full-bodied and richly textured with velvety tannins. Generous flavors of black fruit compote, blackberry jam, and prune are balanced by warm spice notes of cinnamon and clove. The six months in French oak contribute smooth, elegant tannins and subtle vanilla undertones. The wine's natural warmth and alcohol are beautifully integrated, leading to a long, persistent finish with lingering dark fruit and spice.

    Vineyard & Winemaking

Crafted from 100% Primitivo grapes grown in the sun-drenched vineyards of Puglia, where the warm Mediterranean climate and limestone-rich soils create ideal conditions for this powerful variety. After fermentation, the wine is aged for six months in French oak barrels, which adds complexity and refines the tannins while preserving the grape's authentic character and fruit intensity.

    Food Pairing

This robust wine pairs beautifully with grilled lamb chops, braised short ribs, osso buco, aged Parmigiano-Reggiano or Pecorino, wild boar ragu, barbecue ribs, and hearty pasta dishes with rich meat sauces. Also excellent with mature cheeses and charcuterie boards featuring salami and prosciutto.

    Serving Suggestions

Serve at 60-65°F (16-18°C). Decant for 45 minutes to an hour before serving to allow the wine to breathe and reveal its full complexity. Enjoy now or cellar for 5-8 years to develop additional tertiary notes.
